Are you short on time but want to have something cute for your Easter dessert? I’ve got ya covered! I wouldn’t even call these recipes because they are really that easy. Presentation is a big one for me and I wanted to have something yummy while also looking festive and springy!
Carrot Patch Pudding Cups
Who doesn’t love a good chocolate pudding cup? Ok well chocolate anything really. This was a big hit with the kids & adults too!
I started with 2 boxes of chocolate pudding mix and made according to the packaged directions. After letting it cool and set in the fridge for 30 minutes I scooped the pudding into individual clear cups and filled 3/4 full. It made 9 of these cups. I wish I had made more becomes everyone wanted one!
Next take 1/2 a package of Oreos and scrape out the middles so you have just the cookie part. I took the cookies and put them in my manual food chopper and crushed them up pretty fine until they looked like dirt. Sprinkle the “dirt” on top of the pudding.
While the pudding is setting , melt orange candy melts, dip strawberries in the melted mixture, and set them on wax paper. I used one package of candy melts and almost ran out doing 9 large strawberries. If you have extra candy melts I would drizzle some melted goodness on the outside of the strawberries as well. They looked good either way! If I did it again I’d pick strawberries that had better looking green stems too. Mine looked kinda wilted even though the strawberries were fresh.
The you just push one candy covered strawberry into the top of each pudding cup and whaa-laaa! Easy peasy, cute, and festive Easter or Spring dessert!
Bird’s Nest Rice Crispy Treats
This next dessert is as easy as the first I promise! Have you ever made rice crispy treats? My kids love these and this is just a fun spring twist! Prepare the rice crispy treats according to the directions on the rice crispy cereal box. Instead of putting them in a pan you are going to put them in a muffin tray. Make sure you spray each muffin cup in the tray with cooking spray so the mixture doesn’t stick. Fill each cup and use a greased spoon (I just sprayed mine with cooking spray) and push the middle to indent it a bit. Let stand and harden!
Once everything is cooled and hardened, sprinkle cut up edible Easter grass on top (got mine at Michaels). Then place a few egg candies on top of the nest. This one was super adorable!
Peep Brownies
For the adults I just made regular old brownies. To make them festive too I just took some toothpicks, stuck peeps on them, and put them on top of the brownies. You could put one on each brownie or just on top of the display like I did.
